Golestan Province is one of the main producers of processed caviar in Iran.

Golestan Province is one of the main producers of processed caviar in Iran.

Golestan has always been known for its natural resources, especially the Caspian Sea, which is home to a wide variety of shrimps, fish, crabs and oysters.

But caviar is a rarity coming from fish farms in different parts of Iran and processed in some centers in Golestan Province. 

The Acting Director of Golestan Fisheries Department has recently said since March 2022, some "43 kilograms of caviar have been produced" at a processing center located on Ashuradeh Island in Turkmen County."

He added that the same amount was exported to countries such as Canada, Mexico, Hong Kong, Singapore and Qatar.

Caviar is a delicacy that is produced from fish eggs, usually from sturgeon fish. This delicacy is mostly found in the Caspian Sea on the northern coast of Iran.

The production process of Caviar is very time-consuming and requires much labor. 

Caviar can be eaten straight out of the tin or as an ingredient in many recipes including salads, pasta, or even as a topping for ice cream!
